Citrus Avocado Salad to brighten up a dreary day ☀️ this is one of my favorite salad recipes! The orange zest in the dressing really makes it! It’s just so fresh! 🥗 Arugula, baby fennel and green onions from @freshharvest , Hamlin oranges from @triplejfarmsc , blood oranges, pistachios, and avocado tossed with a citrus dressing from @gundrymd . Super easy and a great way to use that winter citrus! 🍊 The dressing is just EVOO, red wine vinegar, Dijon mustard, lemon juice, garlic, and orange zest! I cracked a bunch of fresh salt and pepper over mine, and an extra drizzle of olive oil. It was delicious!!! Full recipe on my blog! 🥗 Made it to another weekend! Ingredients:
Juice of 1 lemon
Zest of 1 orange
1 Tbsp extra virgin olive oil
1 tsp dijon mustard
1 clove garlic, crushed
2 cups arugula, or baby spinach
½ bulb fennel, thinly sliced
¼ cup scallions
Segments of 1 small orange
¼ cup shelled pistachios
1/2 avocado
Sea salt
Cracked pepper
Recipe:
1. In a small bowl, whisk together the lemon zest, orange juice, olive oil, mustard, garlic, and vinegar.
2. In a salad bowl, add the dressing, along with fennel, scallions, and orange. Toss it all together to combine.
3. Add your greens and pistachios, toss it, and sprinkle on flaky sea salt and cracked pepper. Enjoy!
