Ingredients:
1 single size container @kitehillfoods Greek style almond milk yogurt
1/3 cup diced, peeled, de-seeded cucumber
1 tsp lemon juice
1 small clove minced garlic
1 Tbsp fresh dill, chopped
1/2 Tbsp fresh mint, chopped
Salt & pepper to taste
Mix all ingredients together and enjoy! The base of my bowl is fresh spinach from @rodgersgreensandroots tossed with good EVOO, red wine vinegar, oregano, salt and pepper. I topped it with artichoke hearts, kalmata olives, roasted rainbow carrots, peeled/de-seeded cucumbers, @violife_foods feta, and edible yellow parsley flowers from @freshharvest. So flavorful and fresh! āļø
