Green Banana Bread Muffins have my house smelling amazing this morning! ☺️⛅️ The most delicious recipe inspired by @sweetlaurelbakery! 🧁
Green bananas are a great source of resistant starch, before they start to ripen and turn yellow! I used them for this recipe to give my body a great foundation to start the day, especially when I’m on the go! Mama needs her energy without all that extra sugar! 🍌🏃🏽♀️
My sister and I LOVE banana bread and these passed our test! We made them 3 times! 🤣 Hope everyone has a fabulous weekend! 💚
Ingredients (Makes 12 muffins):
1/3 cup @nutiva coconut oil, melted
2 cups mashed green bananas (about 4-6 bananas)
2/3 cup @lakanto maple syrup, or sorghum syrup
2 eggs
1 tsp vanilla extract
2 cups almond flour
1/2 tsp baking soda
1/2 tsp salt
1 green banana, sliced for topping
Recipe:
Preheat the oven to 350F. Line a muffin tin with parchment cupcake holders, or grease the muffin tin with coconut oil.
In a large bowl, beat together the coconut oil, mashed banana, syrup, eggs, and vanilla with a hand mixer or Kitchenaid.
In a medium bowl, whisk the flour, baking soda, and salt. A little at a time, add the dry ingredients to the wet and beat until a batter forms.
Divide the batter amongst the muffin tins. Slice a banana into 12 pieces and top each muffin with one slice.
Bake for 40 minutes, until the tops are golden brown, and a toothpick inserted into the center of a muffin comes out clean.
Remove from the oven and let cool. Enjoy!
